The Place des Vosges three-star institution — a 16th-century arcade dining room founded by Bernard Pacaud in 1981, now under Shintaro Awa, formerly twelve years at Epicure under Frechon. Sea-bass escalopines on artichoke julienne with golden caviar, lobster navarin with rosemary, Bresse pigeon — exacting French classicism, no tasting menu, no compromise.
