Le Cinq
Four Seasons George V's three-Michelin-starred grand salon — Christian Le Squer's gilded dining room on Avenue George V, reopened December 1999 after Prince Al-Waleed's renovation and back to three stars in 2016. Le Squer's gratinated onions Lyon-style and bouillabaisse with bell-pepper sorbet are the textbook examples of contemporary French haute cuisine.

Restaurant Guy Savoy
Three-Michelin-starred temple inside the Monnaie de Paris on the Quai de Conti — voted best restaurant in the world by La Liste for nine consecutive years (through 2026). Six dining salons over two floors, with the chef's table looking onto the Seine and the signature artichoke-and-truffle soup with mushroom brioche still anchoring the tasting menu.

Epicure
Le Bristol's three-Michelin-starred white-and-gold grand salon — a glass-roofed garden dining room overlooking the hotel's interior courtyard. Eric Frechon's whole Bresse hen poached in a pig's bladder, his macaroni stuffed with black truffle and foie gras, and the spring lamb still define the modern French canon two decades in.

L'Ambroisie
The Place des Vosges three-star institution — a 16th-century arcade dining room founded by Bernard Pacaud in 1981, now under Shintaro Awa, formerly twelve years at Epicure under Frechon. Sea-bass escalopines on artichoke julienne with golden caviar, lobster navarin with rosemary, Bresse pigeon — exacting French classicism, no tasting menu, no compromise.

Le Jules Verne
Two-Michelin-starred dining room on the Eiffel Tower's second platform, 125 m above the Champ de Mars — chef Frédéric Anton's program since 2019, Aline Asmar d'Amman's 2019 interior, and a private south-pillar elevator straight into the salle Quai Branly. The closest thing to a private Eiffel Tower experience.

Septime
Bertrand Grébaut's neo-bistro on Rue de Charonne — a one-Michelin-starred counter-driven dining room currently #40 on the World's 50 Best Restaurants list, with a five-course carte-blanche tasting at lunch and seven at dinner, an over-60-winemaker natural-wine list (Selosse, La Stoppa, Radikon), and a reservation cadence opening at 10 AM for three weeks out. The blueprint that defined the modern Paris bistro.
