Major Food Group's mid-century Italian-American spectacle inside Aria — Zac Posen tuxedos, captains carving Caesar salads tableside, and the spicy rigatoni vodka that's now a global cultural object. Opened 2015 as the first Carbone outside Manhattan, and still the loudest reservation on the Strip a decade in. (Carbone Riviera opened separately at Bellagio in 2025.)
